Recipe: Eggplant Pizza

I love pizza, because I'm a human being with a heartbeat. It also makes my tummy happy to eat less bread...meaning we have an issue! Enter these delicious eggplant pizzas. Eggplant is the bomb, so tasty and the perfect little vessel for whatever pizza toppings you'd like. Obviously minus the meat to make it veggie (and lower in sodium, yay!)

Ingredients: 
2 medium Eggplants
1 cup arugula
1/2 cup chopped mushroom/red peppers
1 cup mozzarella cheese
2 T pizza sauce (low sodium option!) 
fresh basil 

optional: Spicy meat such as capicolla or salami


1. Slice eggplant into about 1-1/2 inch slices. Spray pan and cook for about 15 minutes (flipping at halfway) at 350 degrees. 
2. Place pizza sauce on eggplant, spread it out, place meat first or go straight to the veggies, cover with cheese and top with basil. 
3. Broil for 3 minutes. 
4. Top with fresh arugula and enjoy!!

Goal Setting & Habits

I don't necessarily have a problem with people making resolutions; it's great when people try to better themselves! My problem is when people go about it in the wrong way and make their goals so out of reach that they are definitely going to fail. Change is hard, our habits are created through repetition, we have a cue, perform an action and get a reward. Simple, right?
Example: 
Cue: Anxiety 
Action: Have a glass of wine
Reward: Less anxiety
 This is a pretty good example of a maladaptive strategy for dealing with stress and anxiety in the long term. We can change our bad habits by changing out action
Cue: Anxiety
Action: Go for a walk 
Reward: Less anxiety
Its important that this goal of changing our habits is important to us and self directed or else we'll never stick to a new plan or goal. I wrote an article about goal setting before and if you follow those directions in goal setting you're on step closer to success.

Specific: Saying “I am going to be healthier this month” is too general, it needs to be more specific such as “I am going to exercise 3x a week and cut down the refined sugar I consume”
Measurable: This means you can keep track and hold yourself accountable to it, such as going to the gym 3x a week or losing a specific amount of weight.
Actionable: This means you’re going to chose things you actually enjoy and are comfortable doing. Also are actually doable such as losing  x amount of weight in x time frame.
Relevant: These goals are important to you, they are something that has meaning and therefore you are willing to stick to.
Time Based: You have a reasonable time frame to achieve these goals in; you have an end date

It's also important to check-in with yourself or a friend (or trainer) to see how you're doing with these goals. Set a reminder on your phone once a month to do a little self reflection, this will keep you more on track & even if you have a bit of a set back will help you reset.

I don't care...I love it!

I had my eye on a jacket like this for quite some time, and after some serious soul searching I decided to pick this baby up. I am super into the 70's vibes this look is throwing out, the exact reason Darcy does not like this coat. There is conflicting feelings from others regarding this coat, you either love it or you hate it. And I absolutely love it, so that's all that matters. It feels like I'm wearing a hug! I want to curl up in it and take a nap. 
Not only am I loving the 70's vibes but I am super into the white accessories trend right now, I've always been a sucker for a white purse. I can't invest in a pair of white booties though, they would be destroyed in exactly 20 seconds.

Goals for 2018

1. Continue to practice self-love
I feel like a did a much better job of this in 2017 than 2016 but I'm sure we can all improve upon this. Less negative self talk and more positivity around my body and all the things it does!
2. Start Sparing
Honestly I've been wanting to do this for a while, I've been loving my kickboxing training and want to take it to the next level. What better time than 2018?!
3. More downtime
I said this last year too and I really don't think I did a great job of this. I need more time for self care and "me" time, whatever that looks like at the time. I am in a great place where I am able to work a lot but I also need to ensure I am mentally and physically rested to be able to perform optimally.
4. Learn something new
I really want to take some more courses related to fitness/psychology and I think this would be a great year to do so!
5. Spend less on material things
A style blogger saying she's going to buy less? What is this? Yes, I need to spend less money on material things, I am going to try to do more second hand shopping and save my pennies for experiences and my other goals.

Low carb Lasagna

Now that we're done carb loading from Christmas and eating a lot of sweets it's time to get back on track. This vegetarian or turkey low carb lasagna is just the thing! No noodles, just veg and so delicious. 

Ingredients: 
1 Medium eggplant
2 Medium zucchini 
1 lb ground turkey (or veggie ground) 
2 cup low fat cottage cheese
1 egg
1 yellow pepper
1 onion
1 large can pasta sauce, or homemade sauce. 
2 cup Mozerella
1/2 cup Parmesan

Directions
1. Cut zucchini and eggplant into thin noodle like slices, using a mondoline is easiest but if you don't have one that's fine.  
2. Salt zucchini, set aside for 30 minutes, wipe off and then grill lightly. Grill the eggplant lightly as well. 
3. Saute turkey and garlic over medium heat, add in 1/2 cup of pasta sauce. 
4. Drain the cottage cheese,  mix in the egg and Parmesan cheese.  
5. Put a small layer of pasta sauce on bottom of the slow cooker, place zucchini slices on it, layer cottage cheese and turkey (or veggie ground) over it. Continue to layer like this alternating eggplant and zucchini. 

6. Last layer should be zucchini, top off with mozzarella and whatever is left of pasta sauce. Place slow cooker on high for 3 hours. Let cool and enjoy!!
