Low carb Lasagna

Now that we're done carb loading from Christmas and eating a lot of sweets it's time to get back on track. This vegetarian or turkey low carb lasagna is just the thing! No noodles, just veg and so delicious.
Ingredients:
1 Medium eggplant
2 Medium zucchini
1 lb ground turkey (or veggie ground)
2 cup low fat cottage cheese
1 egg
1 yellow pepper
1 onion
1 large can pasta sauce, or homemade sauce.
2 cup Mozerella
1/2 cup Parmesan
Directions
1. Cut zucchini and eggplant into thin noodle like slices, using a mondoline is easiest but if you don't have one that's fine.
2. Salt zucchini, set aside for 30 minutes, wipe off and then grill lightly. Grill the eggplant lightly as well.
3. Saute turkey and garlic over medium heat, add in 1/2 cup of pasta sauce.
4. Drain the cottage cheese, mix in the egg and Parmesan cheese.
5. Put a small layer of pasta sauce on bottom of the slow cooker, place zucchini slices on it, layer cottage cheese and turkey (or veggie ground) over it. Continue to layer like this alternating eggplant and zucchini.
6. Last layer should be zucchini, top off with mozzarella and whatever is left of pasta sauce. Place slow cooker on high for 3 hours. Let cool and enjoy!!

The temperatures have dropped again around here, -20 degrees! It's chilly as all hell, but it means I'm getting all my cozy knits out and wearing them all at once. This sweater is a few years old, but it's always a go to, oversized, off the shoulder and loose knit. It's a great mix knit of grey and black thread and I'm really into it with more grey.
Grey, blush, and black are a really great palette together, subtle but fun to be able to mix textures instead. I am ready to now hibernate until the spring thaws my poor bones out.

Well it's not very nice out anymore but that doesn't mean you can't enjoy the great outdoors and make your own warmth! Or you can bring this workout indoors and stay cozy. This is a great full body workout for the upcoming days with all the Christmas festivities!!
1. Dips 30s
Hands under shoulders, feet can either be flat on the ground, or bring one up to make it more difficult. Slowly lower yourself down and then push yourself back up.
2. Push ups 30s
Hands under shoulders, neck nice and neutral, bring your body down slowly, and press straight up. To make it more difficult bring one leg up, keep the core very tight.
3. Single leg squats
Find a seat that is the right height for you, slowly lower into one leg/hip and squeeze the glute to come back into a standing position.
4. Step up to hop 30s per
Place one leg on step then step into it and drive the opposite leg up and hop.
5. Squat jumps
Sink into your hips and press through your legs and jump up.
6. Leg hold as long as possible
Bring legs out in front straight and hold legs, core tight.
7.Step overs 30s
Place one foot on bench, press into that leg and hop over, going back and forth
8. Jumping Jacks 30s

Can't get enough of this teddddddy coat! It's so soft, cozy and the colour is great. This combo of blush pink and maroon is so my jam right now. This outfit is perfect for a casual Christmas party, which we have a few of. We also have some fancy ones. We basically have a ton of Christmas parties, dinners and gatherings over the next few weeks. I need some seriously loose fitting dresses and pants. This sweater dress is pretty good to hide the food baby, which is essentially how I plan my party outfits. I love to workout a lot which means I'm constantly hungry! And free food is all the better :)

Signs of this can include: Chronic fatigue, insomnia, anxiety, loss of appetite, physical symptoms such as heart palpitations,headaches, dizziness, stomach pain, increased illness etc.
Maybe you only recognize a few of these symptoms, or maybe you've just been in a really stressful state, but self care and taking time for this is incredibly important. It's easier said than done though, so just like a workout sometimes you need to schedule it.
Some good ways to get in self care:
1. Get a massage/physio/acupuncture
2. Do something you really love but never make time for. This can be as simple as catching up on a show, doing a fun activity etc.
3. Meditate, adding in 5-10 minutes a day can be incredibly beneficial.
4. Take a long hot shower/bubble bath
5. Talk to a psychologist, we all thing "we can do this alone" but every single person gets overwhelmed from time to time, and having someone who is an expert to talk to can be so beneficial.
6. Make space in your life for things outside of work/commitments. I get it, we're all super busy but making time to have to yourself is incredibly important and rewarding.
7. Cuddle a puppy dog, it has actually been scientifically proven that petting a dog can bring down your stress levels. And those who own a dog generally lead a happier life.

Pulled chicken whole bowls are a staple in our weekly rotations, they're delicious, easy and healthy. A win on all fronts!
Ingredients:
3 chicken breasts
I cup fresh salsa
1 can corn
3 T sriracha
1 can black beans
2 cups lettuce
1/2 cup cilantro
2 cups brown rice
1. In slow cooker place chicken breasts, cover with salsa and cook on low for 6-8 hours. Pulls chicken apart and mix with leftover salsa. While this is finishing, cook brown rice.
2. In a pan heat 1 T olive oil over medium heat, add corn (drained), and then add in sriracha. Cook this over medium-high heat until it starts to become crisp. This can also be done in the oven, at 300 degrees for 20 minutes (stirring occasionally)
3. Shred lettuce, chop cilantro finely.
4. In a bowl place 1/2 cup brown rice, 1/2 cup shredded chicken breast, 1/2 cup lettuce, 1/2 cup black beans and 1/2 cup corn. Garnish with cilantro, you can also add cheese & plain greek yogurt to top.

{Duke} Hikes in Jasper

I love that this post of our Jasper "winter" hikes have 1) no snow 2) are basically just pictures of the dog. What can I say, he's just the most photogenic of the group of us. Also Darcy hates having his photos taken.
In Jasper we did one of the in town trails, the Jasper Discovery trail which was pretty easy and lovely. I was feeling unwell all weekend with a wicked cold that left me coughing so our usual go-to of 5 hour hikes with elevation were a no-go. The discovery trail took us about 2 1/5 hours and was a nice walk. We also did Valley of the Five Lakes, which had a few more inclines and came in at about 2 hours. The lakes are gorgeous, the trails were really easy and well maintained. We didn't even wear hiking boots for either as the weather was so darn mild!
We'll have to head back later this winter and do some of the other trails we have our eyes set on. It's just so nice to get away from the city, turn the cell phone off and relax.

I got this jacket for Christmas 2 years ago, and it has been one of my favourite winter coats ever since. I love when I can find an incredibly cozy jacket that is also super cute like this one. When you live in basically the arctic for 6 months out of the year, it's good to have a few coats like that. I'm very into having a functional wardrobe, but refuse to give up my sense of style.
I've had these boats for going on 5 years now and they are even more badass than when I got them. They were always meant to be broken in, so the more I break them in the better they look. The perfect item for me, as I am very hard on my footwear. We took these on our weekend getaway to Jasper, this was the view right outside our place on Pryamid Lake. It was such a great spot, so beautiful, really quiet this time of year, exactly what I needed.

Comfort Food Recipe: Chicken Parmesan

Chicken Parmesan is one of Darcy's favorites, along with any sort of pasta. I made my take on it for him a few weeks ago to rave reviews. I paired mine with zucchini noodles which was SO good.
Ingredients:
4 chicken breasts pounded to 2 inches thick
1 cup panko
3 eggs
3 T parmesan
Pasta sauce of your choice (I often make this one when I have time)
Whole wheat pasta, or Zucchini noodles
1. Mix together panko, and Parmesan cheese in one dish, eggs into another dish. Flatten chicken breasts.
2. Dip chicken breasts in eggs, then dip into panko mixture, place in frying pan on medium heat with 2 T olive oil. Brown chicken breasts on either side.
3. Place browned chicken breasts in a casserole dish, cover with pasta sauce, top with mozerella cheese and bake for 20 minutes at 345 degrees.
