Mexican Marinade for whole bowls

Thursday, February 8, 2018
I love a good marinade or rub, it adds so much flavour to whatever you put it on. This is one of our favourites, a little spicy, mexican flavour. I really like this one in a big ol' tasty bowl with rice, veggies and avocados.

Ingredients for marinade:
1 bunch cilantro
1 chopped jalepeno
3 cloves minced garlic
2 T lime juice
1 T olive oil

1. Blend all ingredients together in a food processor, add in more olive oil/water if it doesn't blend smoothly.
2. Marinade steak/shrimp/chicken for 1 hour before grilling. Save some of the marinade to grill veggies with.
3. Slice up 2 peppers, 1 onion and sautee them with the marinade. Grill meat at the same time.
4. Cook brown rice, sautee corn with sriracha
5. 1 scoop brown rice, 2 T corn, 1 scoop peppers/onions, top with meat, half an avocado, and 2 T salsa.

Recipe: Pulled chicken

Wednesday, December 13, 2017
Pulled chicken whole bowls are a staple in our weekly rotations, they're delicious, easy and healthy. A win on all fronts!

Ingredients:
3 chicken breasts
I cup fresh salsa
1 can corn
3 T sriracha
1 can black beans
2 cups lettuce
1/2 cup cilantro
2 cups brown rice

1. In slow cooker place chicken breasts, cover with salsa and cook on low for 6-8 hours. Pulls chicken apart and mix with leftover salsa. While this is finishing, cook brown rice.
2. In a pan heat 1 T olive oil over medium heat, add corn (drained), and then add in sriracha. Cook this over medium-high heat until it starts to become crisp. This can also be done in the oven, at 300 degrees for 20 minutes (stirring occasionally)
3. Shred lettuce, chop cilantro finely.
4. In a bowl place 1/2 cup brown rice, 1/2 cup shredded chicken breast, 1/2 cup lettuce, 1/2 cup black beans and 1/2 cup corn. Garnish with cilantro, you can also add cheese & plain greek yogurt to top.

Recipe: Black bean and feta salad

Tuesday, May 23, 2017

This is hands down the best salad I've made lately, it's perfect for the summer, light but super filling. The lime and cilantro make it sort of Mexican themed, so it's great as a main or can be a perfect side dish. We added some grilled steak and I've also had it with a turkey burger, so good!!

Ingredients:
1 can black beans, washed
1 can corn (or fresh of the cob in season, that's the best)
3 large tomatos
3 stalks green onion
1/2 cup finely chopped cilantro
1 jalepeno
1/2 cup lime juice
1/4 cup olive oil
2 T crushed garlic
 1/2 cup feta

Directions:
1. Preheat oven to 400 degrees, spread corn on baking sheet and pour sriracha on top and bake for 20-30 minutes or until it's crunchy.
 2. Chop up jalapeno, cilantro, tomatoes, green onions, put in a large bowl with the black beans and corn once it's cooked
3. Mix garlic, olive oil, and lime juice together. Pour this over the salad, mix up and top with the feta cheese.
4. Eat as is or top with steak

Recipe Pineapple Salsa

Thursday, March 9, 2017

I am such a huge sucker for anything pineapple. This obsession with the sweet fruit extends to candles, cute printed tees and even a tattoo. But as far as food goes I am of the camp where pineapple belongs on anything and everything. So you bet your booty I have a kickass pineapple salsa recipe for multiple kinds of tacos.

Ingredients:
1 cup cubed pineapple
1/4 cup diced onion (red or white)
1/5 a diced jalapeno
1/4 cup finely chopped cilantro
Juice of 1 lime

Directions:
1. Dice all ingredients up, place in bowl and let sit over night, this really helps the flavours pop.

Excellent with Shrimp Tacos or Pulled chicken/pork tacos

Recipe: Tex Mex Salad

Thursday, July 21, 2016

I eat this salad so much, I think it tricks me into believing I'm having something more fun than salad because of the guac and crunch from the tortilla chips. It's super easy and can be dressed up with by adding more to it or keeping it simple. Also this tex mex mix is the bomb with barely any sodium!

Ingredients:
1 pkg ground turkey
2 TBSP tex mex mix
1/2 can black beans
2 tbsp salsa
2 tbsp homemade guac
6 baby tomatoes
7 tortilla chips

1. Sautee turkey on medium heat with olive oil, add in the mix
2. Mix everything else together, can add fresh cilantro to top it off and vegetarians can replace the meat with chickpeas for their protein boost.

Recipe: Holy Moly Guacamole

Thursday, July 7, 2016
Guacamole is so so good, and as convenient as store bought is, nothing beats homemade! And it really is quite simple. I've had this  recipe for years and its good everytime.

Ingredients:
2 whole ripe avocados
1 tomato
Quarter of a white onion
Quarter of a bunch of cilantro chopped finely
2-3 gloves garlic, or garlic paste
Half a lime

1. Finely chop the tomato, cilantro & onion into small pieces.
2. Squish avocados until completely mushed up
3. Mix all together, add the garlic paste and squeeze in lime. Serve with chips or top off a burger or taco :)
