Recipe: Black bean and feta salad
Tuesday, May 23, 2017
This is hands down the best salad I've made lately, it's perfect for the summer, light but super filling. The lime and cilantro make it sort of Mexican themed, so it's great as a main or can be a perfect side dish. We added some grilled steak and I've also had it with a turkey burger, so good!!
Ingredients:
1 can black beans, washed
1 can corn (or fresh of the cob in season, that's the best)
3 large tomatos
3 stalks green onion
1/2 cup finely chopped cilantro
1 jalepeno
1/2 cup lime juice
1/4 cup olive oil
2 T crushed garlic
1/2 cup feta
Directions:
1. Preheat oven to 400 degrees, spread corn on baking sheet and pour sriracha on top and bake for 20-30 minutes or until it's crunchy.
2. Chop up jalapeno, cilantro, tomatoes, green onions, put in a large bowl with the black beans and corn once it's cooked
3. Mix garlic, olive oil, and lime juice together. Pour this over the salad, mix up and top with the feta cheese.
4. Eat as is or top with steak

Even my boyfriend who doesn't like pancakes can't get enough of these babies. Also, I hate my kitchen and can't wait till I move for more space and better lighting.

2 scoops vanilla protein powder
1/4 cup eggs whites
2 T flaxseed

1 T baking powder
