This kale salad is so perfectly autumn it's ridiculous! It's delicious and full of healthy ingredients which is the best combo.

Ingredients: 
1 small butternut squash 
3 cups brussel sprouts 
1 bunch red kale 
3 oz goat cheese
1/4 cup unsalted pumpkin seeds
4 garlic cloves
1/2 shallot 
3 tbsp balsamic vinaigrette

1. cut brussel sprouts in half, place in plastic bag add 1 tbsp of olive oil, 2 crushed garlic cloves and cracked pepper, mix well. Spread on baking sheet and bake for 20-25 minutes at 400 degrees
2. Cut up butternut squash into bite size chunks, sprinkle with olive oil, 1 tbsp nutmeg 1 tbsp cinnamon, bake at 400 degrees 30-35mintues
3. Mix 2 cloves crushed garlic and chopped up shallots over medium heat in pan, add in vinaigrette until simmers
4. Wash kale, cut up into small pieces and massage with olive oil until tender. 
5. Add squash, brussel sprouts, pumpkin seeds and crumbled goat cheese to kale, top with the warm vinaigrette and serve.
